Colcannon
3 cups finely shredded green cabbage
1 onion, finely chopped
Water (enough to boil cabbage and onion in)
6 cooked potatoes, mashed
1/4 cup milk
1/4 cup butter
Salt and pepper to taste
Put cabbage, onion and water in a saucepan and bring to a boil.
Reduce heat to simmer; cover and cook for about 8 minutes or until
tender. Drain well.
Next, add mashed potatoes, milk, butter, salt
and pepper. Mix well and serve while hot. |
