1-1/2 cups tart apples, seeded and cut into small pieces
1/2 pound bacon, cooked and crumbled
1-1/2 cups sharp cheddar cheese, grated
1 cup flour
2 teaspoons cinnamon, divided
1/4 cup sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
3 eggs

Preheat oven to 450 degrees. Sift together flour, 1 teaspoon cinnamon, baking powder and salt. In a separate bowl, whisk eggs and milk together. Combine wet and dry ingredients to form a batter. Set aside.
Separately, coat apple pieces with 1 teaspoon cinnamon and 1/4 cup sugar. Place apples, bacon and cheese (in that order) into six ramekins* that have been coated with cooking spray. Ladle batter over the top of the apples, bacon and cheese. Bake for 20 minutes or until batter sets and the tops are golden brown.
*Ramekins are single-serving, oven-proof dishes. They’re usually made of ceramic or glass.
