1 cup plus 1 tablespoon sugar
1 cup applesauce
2 eggs
1/2 cup canola oil
3 tablespoons milk
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1-1/2 cups walnut halves
1/4 cup brown sugar
Preheat the oven to 350 degrees. In a large bowl, mix 1 cup of the granulated sugar with the applesauce, eggs, oil and milk. Combine the flour, baking soda, salt, baking powder and cinnamon in a separate bowl. Mix the contents of both bowls together, and stir in the nuts.
Pour into two 8-1/2-by-4-1/2-inch loaf pans. Mix the brown sugar with the remaining 1 tablespoon of white sugar, and sprinkle evenly over the top of each loaf. Bake for about one hour, until a toothpick inserted in the center comes out clean. Cover the tops of the loaves with foil for the final 30 minutes if they begin to get too brown.
