1 cup Bisquick baking mix
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup milk
2 cups cheese, shredded
12 ounces evaporated milk
4 eggs
1/4 teaspoon Tabasco sauce
1 teaspoon salt
3 slices bacon
1 small onion, chopped

Preheat oven to 400 degrees. Combine baking mix, 1/2 teaspoon salt, pepper and milk and mix until moist. Knead a few times on a floured surface, then fit into a lightly greased 9-inch pie pan.

Fry bacon and onion until brown. Drain well. Crumble bacon and sprinkle bacon, onion and cheese into the pie shell.

Heat evaporated milk just until hot. Beat eggs; stir in 1 teaspoon of salt and Tabasco, then slowly stir in evaporated milk. Pour into shell. Bake at 400 degrees for five minutes, then lower to 350 degrees and bake for 25 minutes until the center is almost set. Do not over bake.
