1-1/2 pounds flank steak, trimmed and cut into 6 pieces
1-1/2 cups of your favorite salsa
1/2 cup chopped sweet onion
1/2 green bell pepper, cut into strips
1/2 red bell pepper, cut into strips
Grated cheese (optional)
Tomatoes, chopped (optional)
Black olives, sliced and drained (optional)
Lettuce, shredded (optional)
Sour cream (optional)
Guacamole (optional)
Black beans (optional)

Place all ingredients in a crockpot and stir well. Cook on low for 8 hours or on high for 4-1/2 hours. Remove meat to a platter and shred with two forks. Serve in warmed tortillas with any or all of the following: grated cheese, chopped tomatoes, sliced black olives, lettuce, sour cream, guacamole or black beans.
