1 cup sugar
2 sticks unsalted butter, softened
1 cup molasses
1 cup boiling water
2 teaspoons baking soda
1 tablespoon ground, dried ginger
1/2 teaspoon cinnamon
2-1/2 cups flour
2 eggs, beaten
1 tablespoon fresh ginger, grated

Preheat oven to 350 degrees. Spray a 9-by-9-by-2-inch baking pan with nonstick cooking spray and set aside.
In a bowl, combine sugar, butter, molasses and boiling water; set aside. In another bowl, mix together the baking soda, dried ginger, cinnamon and flour. Whisk the wet ingredients into the dry ingredients, then mix in the eggs and tablespoon of grated fresh ginger*.
Pour the batter into the prepared pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.

* Using fresh ginger (as well as powdered ginger) adds a nice, pungent note to this favorite holiday bread recipe.
