Chicken Salad Croissant

Ingredients

  • 6 strips bacon
  • 1 rotisserie chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup scallions, chopped
  • 1/2 teaspoon pepper
  • 1/2 cup cherry tomatoes, quartered
  • Croissants
  • Sprouts

Directions 

In skillet, arrange bacon and cook until slightly crispy. Drain bacon over paper towel; allow to dry. Crush into pieces.

In large bowl, stir chicken, mayonnaise, scallions and pepper until combined. Add bacon and tomatoes; stir until combined.

Cut croissants in half. Spoon generous portion of chicken salad over bottom croissant. Top with sprouts. Replace top croissant.

Salad with Berries, Celery and Burrata

Ingredients

Salad:

  • 4 sticks celery, divided
  • 4 strawberries, cut in half
  • 1 handful blackberries
  • 1 handful blueberries
  • 1 handful raspberries
  • 1 medium burrata or fresh mozzarella ball, cut in half
  • 3 cups arugula
  • 1 handful sunflower or pumpkin seeds, or sliced almonds

Dressing:

  • 3 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 3 tablespoons olive oil
  • 1 pinch sea salt

Directions 

Using grill pan or directly on grill, cook two celery sticks and strawberries until soft with grill marks on either side.

While celery and strawberries grill, make dressing. In jar, mix orange juice, lemon juice, Dijon mustard, honey, olive oil and salt.

Cut grilled and remaining raw celery sticks at angle into 1/4-inch pieces.

In mixing bowl, toss celery, strawberries, blackberries, blueberries, raspberries, burrata, arugula and seeds or almonds with dressing. Mix well.

Quick and Easy Quiche 

Ingredients

  • 1 deep-dish pie shell, thawed
  • 1 to 2 tablespoons butter, softened
  • 8 eggs
  • 1/4 cup heavy whipping cream
  • 1/4 cup frozen or fresh spinach
  • 1 cup shredded cheese of choice
  • 2 1/2 ounce package real bacon pieces
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Directions 

Heat oven to 375 degrees.

Using fork, poke holes in pie crust. Spread softened butter over crust.

In medium bowl, mix eggs, cream, spinach, cheese, bacon pieces, onion powder and garlic powder. Add salt and pepper, to taste. Pour into crust.

Bake quiche 45 minutes. Egg mixture  should pull away from crust when done.

Vanilla Scones

Ingredients

Scones:

  • 2 cups self-rising flour
  • 3 tablespoons sugar
  • 5 tablespoons butter, melted
  • 1 cup vanilla coffee creamer

Glaze:

  • 3 tablespoons butter, melted
  • 1 cup powdered sugar
  • 3 tablespoons creamer

Directions 

Heat oven to 450 degrees.

Mix flour, sugar, butter and creamer. Place in buttered scone pan or 9-inch round cake pan. If using cake pan, score dough into triangles.

Bake 12 to 15 minutes until golden brown.

To make glaze: Mix melted butter, powdered sugar and creamer then drizzle over warm scones.
