Half of a large Chinese cabbage
4 green onions, chopped (include tops)
1/2 cup green pepper, chopped
3-ounce package chicken ramen noodles
2 tablespoons sesame seeds, toasted
1/2 cup almond slices
1/2 cup olive oil
3 tablespoons rice vinegar
1/2 teaspoon salt
1/2 tablespoon sugar
Chop cabbage; add onions and green pepper. To prepare dressing, mix olive oil, rice vinegar, salt, sugar and seasoning packet from noodles.
Break noodles apart. Just before serving slaw, add toasted sesame seeds, almonds, dry noodles into slaw mix; add dressing and toss to coat well.
