1-1/2 cups cooked chicken, chopped
1/2 cup chopped red bell pepper
1 (1.25-ounce) envelope taco seasoning mix
12 ounces Monterey Jack cheese with peppers, shredded
3 tablespoons salsa
1/2 teaspoon salt
1/2 teaspoon ground black pepper
50 wonton wrappers
In a mixing bowl, combine first seven ingredients. Place 1 teaspoon of the mixture in the center of each wonton wrapper. Moisten wonton wrapper edges with water; bring corners together, pressing to seal.
In a Dutch oven, pour oil to a 2-inch depth and heat to 350 degrees. Fry wontons in batches until golden, turning once. Drain on paper towels and serve immediately.
