1st: CC’s City Broiler, Columbia; 573-445-7772

For the past quarter of a century, mid-Missourians have been treated to great steaks in an authentic atmosphere at CC’s City Broiler in Columbia. Get to CC’s early if you want the 20-ounce Gary’s Steak, a slow-roasted Prime rib that is finished on the grill to your liking. They only make one roast per day. Looking to splurge? Check out their specials menu for American Wagyu, Akaushi premium cuts of beef. Add some surf to your turf with a South African lobster tail or some of CC’s jumbo shrimp.

2nd: Matt’s Steakhouse, Rolla; 573-364-1220

Sometimes a steak is all that will do, and if you’re in Rolla or nearby, head to Matt’s Steakhouse for a great cut. All of the steaks at Matt’s are USDA choice cuts aged, hand-cut, trimmed and charbroiled just to your liking in house. For the discerning palate, opt for the 8-ounce filet or the 12-ounce rib-eye, each served with unlimited Signature Salad and breadsticks.

EC: Hughes Bar X Ranch, Albany; 660-726-2279

While there may be plenty to choose from on the menu at Hughes Bar X Ranch, there’s really not on your first visit. That inaugural dinner menu starts with owner Charmayne Hughes’ — locally known as the Prime Rib Queen — signature dish. The whole prime roast weighs up to 15 pounds each and is served in three sizes. A small is 9 to 11 ounces, a regular is 18 ounces and if you left your diet at home, go for the 1 1/2-inch-thick king size.
