2 tablespoons butter
1 tablespoon crushed garlic
4 cups chopped fresh or frozen okra
3 cups fresh diced tomatoes
1 cup chopped onion
1 teaspoon sugar
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 cup grated Parmesan or Romano cheese

In a large skillet, heat the butter and sauté’ the garlic over medium heat until light and browned. Add the okra; reduce heat to low and cook for 15 minutes, stirring occasionally. Add tomatoes, onions, sugar, pepper, thyme, and rosemary and continue cooking for 5 minutes. Remove from the heat and stir in the cheese.
