3 pounds trout
1/2 cup butter
1/2 cup bread crumbs
1 cup chopped mushrooms
1 small onion, chopped
1 cup grated Parmesan cheese
1/2 cup fish stock or water

Preheat oven to 350 degrees. Brush pan with butter and sprinkle with bread crumbs.
Place whole fish in prepared pan. Sprinkle generously with bread crumbs. Brown mushrooms and onion in butter. Spoon mushrooms and onions over trout; sprinkle generously with the bread crumbs and grated Parmesan cheese. Dot with pieces of butter. Add the fish stock or water. Bake for 45 minutes and serve immediately.
