2 cups turkey, cooked and chopped
2 cups leftover stuffing or mashed potatoes
1/4 cup butter
1 onion, chopped
2 stalks celery, including leafy tops, chopped
4-ounce can green chilies, chopped
1 cup pepper Jack cheese, shredded
2 eggs, beaten
Salt and black pepper to taste

In a large bowl, combine the turkey and stuffing or potatoes and set aside. Melt butter in a skillet. Add onion and celery and sauté for about 5 minutes. Add to the turkey mixture along with the chilies, cheese and beaten eggs. Mix together and season to taste with salt and pepper. Form into patties.
In the same skillet, sauté the patties over high heat for about 3 or 4 minutes until cooked through and golden brown. Serve hot.
