1 cup margarine
2 teaspoons vanilla
1 cup flour
1/2 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup shredded carrots
1/2 cup coconut
1/2 cup nuts, chopped
1/4 cup milk
3 eggs, beaten
1 cup whole wheat flour
3/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon cloves
1/2 cup apples
1/2 cup raisins
Sift dry ingredients. Fold in remaining ingredients and stir until moistened. Spoon into greased muffin tins and bake at 350 degrees for 20 to 25 minutes.
