2 pounds small red potatoes
5 carrots, cut into thirds
3 white onions, quartered
1 head cabbage, cored and cut into quarters
4 ears fresh corn, shucked and broken in half
2 pounds smoked sausage, cut into 2-inch pieces
3 tablespoons Cajun seasoning
1 teaspoon black pepper
1 teaspoon chopped garlic
2 teaspoons salt
1/2 gallon water
Layer all ingredients, in order listed, into a 16-quart stock pot or clean milk can. Add the water last. Put the lid on and place on burner on high heat or place on hot coals over campfire for 40 minutes.
