2 cups flour
1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 cups buttermilk
2 large eggs
2 tablespoons butter, melted
1 large Granny Smith apple, peeled and chopped

Combine flour, sugar, baking soda and salt and make a well in center of the dry mixture. Stir together buttermilk, eggs and butter. Add to dry ingredients, stirring just until moistened. Fold in apple.
Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle. Cook until tops are covered with bubbles and edges look cooked; turn and cook other side.
