1 cup butter or margarine
1 cup peanut butter
1/2 cup sugar
1 cup brown sugar, firmly packed
2 large eggs
1 teaspoon vanilla
2-1/4 cups ground oat flour* (about 3 cups oats, unground)
2 teaspoons baking soda
1/4 teaspoon salt
1 cup chopped peanuts

In a large bowl, beat together butter, peanut butter and sugar. Add eggs and vanilla; mix well. In another large bowl, combine dry ingredients except for the nuts; blend well. Stir into butter mixture just until all the flour is absorbed. Stir in nuts; chill dough for an hour.
Heat oven to 350 degrees. Shape dough to form 1-inch balls. Place on an ungreased cookie sheet. Flatten with fork dipped in sugar to form criss-cross patterns. Bake about 10 minutes or until edges are golden brown.
*To make ground oat flour: Place uncooked oats in a blender or food processor. Cover and blend about 1 minute. Stop blender occasionally to stir oats.
